Plain Cheddar Curds
All cheeses are made by separating the curd-the solid part of the milk-from the liquid whey. Just before Cheddar curd goes to press to be formed into cheese, it is cut up into bite-sized pieces and salted, and these chucks of “almost cheese” have been eaten for centuries as a unique country snack. Eat them like popcorn, sprinkle on salads or use in an omelet.
